Garlic bread is a food that people like for its flavor.

The thing about garlic is that it has a high amount of sugar, so it caramelizes under heat.

This is known as the Maillard reaction.

Without it bread wouldn't be brown, cooking would be completely different & caramelized onion would be a myth.
